Traditional Fava

A traditional and an all-time favourite appetiser that is easy to make. Serve it with toasted bread or toasted pitta bread. Additionally you can add caramelised onions and make this a real treat.

Traditional "Fava" Recipe or Yellow Split Pea Dip 

Preparation time:  5 minutes

Cooking time: 1 hour & 40 minutes

200g yellow-split peas, washed and drained

1 L of water

1 medium onion, peeled and cut into quarters

50ml  olive oil

1/2  teaspoon cumin

1/2 teaspoon thyme

Salt & Pepper


To serve:

Caramelised onions


Bread or Pitta bread


  1. Place the yellow-split peas in a pot and cover it with the water. As soon as the water boils, add the onion to the pot. Add the olive oil, cumin, thyme, salt, pepper and lower the heat to medium. Simmer for 1 hour and 40 minutes.
  2. Once softened and thoroughly cooked, mix the split peas until they take on a porridge like consistency or if you prefer a smoother consistency use an immersion blender and pulse it until it becomes smooth.
  3. Serve the fava on a platter and garnish with the slices of caramelised onion, capers and bread.
