Giant Skillet Cookie

Everything you would want in a cookie, in giant form! There are no more words, just make it, it's to die for!

200g salted butter, chopped, at room temperature

200 g sugar 

110 g brown sugar 

2 large eggs

2 teaspoons vanilla extract

200 g all-purpose flour

1 teaspoon baking powder

1 teaspoon  salt

80g peanut butter

100 g dark chocolate chips

100 g white chocolate chips



  1. Preheat the oven to 200 ℃
  2. Place the cast iron pan on the stove top and melt the butter. Once the butter has melted remove the pan from the heat. Add in the sugars, the eggs and mix until combined. Add the vanilla, flour, baking powder, salt and half the peanut butter. Mix until combined. Finally fold in the chocolate chips and swirl in the remaining peanut butter.
  3. Transfer the skillet to the oven and bake for 20-22 minutes for an extra doughy centre or 22-25 minutes for a more set cookie. 
  4. Remove from the oven, let cool 3-5 minutes. Sprinkle with sea salt (if desired). Dig in! preferably with a scoop of ice cream.
