Christmas Mince pies

 The ultimate festive dessert. It’s not Christmas until I have made these wonderful mince pies!

Servings: 8 medium mince pies 


For the dough

180 g flour

1/4 teaspoon salt

90 g butter chopped

30 g sugar

1 egg

1 teaspoon lemon zest


  1. Pour all the dough ingredients into a bowl and knead for a few minutes until you have a soft dough.

  2. On a floured surface, open 3/4 of the dough to a thickness of about 3 mm using a rolling pin.  Using the top of a large mug, cut the dough into disks. Fit each disk into a silicone cup cake case.

  3. Fill each case with 2 teaspoons of mince meat.

  4. Open the rest of the dough with your rolling pin, flouring your surface a bit more.  Cut the dough into star shapes or any other shape you fancy with our cookie cutters. Top each mince pie with a star and place the mince pies in a baking pan.

  5. Bake the mince pies for 20-25 minutes in a preheated oven at 180 °C. When the mince pies have completely cooled, carefully remove them from their cases. Sprinkle with icing sugar and serve!

Makes 2 x 250ml jars


For the Christmas Mince Meat:

220 g raisins

50 g dried apricots, chopped

35 g dried cherries

330 g apples, peeled and diced

30 g brandy

120 g sugar

Zest of half a lemon

Juice of half a lemon

1 teaspoon ground cinnamon

1/4 teaspoon ground cloves

1/4 teaspoon nutmeg


  1. Make the mince meat by pouring all its ingredients into a sauce pan 
  2. Bring the mixture to a boil, reduce the heat to medium, cover the pan and simmer for 30 minutes.
