Chocolate Glazed Cookies

Ingredients
For the Glaze
20 g cocoa
90 g milk
170 g chopped dark chocolate
1 tsp butter
1 tsp vanilla extract
For the cookies
90 g butter chopped
100 g brown sugar
1 egg
1 tsp vanilla extract
220 g all-purpose flour
1 tsp baking powder
1 tsp salt
1 tsp instant coffee
150 g dark chocolate chips
Method
- Preheat the oven to 200°C. Line a baking pan with baking paper.
- Make the chocolate glaze by gently heating the milk in a small saucepan. Add the cocoa, chocolate chips, butter and vanilla. Stir until the chocolate melts and you have a smooth mixture.
- To make the dough. Add the butter, sugar, egg, vanilla, flour, baking powder, salt, coffee and mix until all ingredients are combined. Transfer the dough in a bowl and fold in the chocolate chips with a spoon.
- Using an ice cream scooper, scoop out portions of the dough; place them widely apart on the lined baking pan; bake for 11 to 13 minutes or until golden.
- Allow to cool for 5 minutes, then spread each cookie with a thick layer of chocolate glaze. Highly recommend to be enjoyed with vanilla ice cream!
